- Long grain rice - 1 cup
- Water - 2 cups
- Olive oil - 2 tablespoons
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Raisins - 1/4 cup
- Cinnamon stick - 1 small
- Salt - 1 teaspoon
- Black pepper - 1/4 teaspoon
- Chopped parsley - 2 tablespoons (for garnish)
Steps
- Rinse the rice under cold water until the water runs clear, then drain.
- In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add the minced garlic, and cook for another minute until fragrant.
- Stir in the rinsed rice, and cook for 2-3 minutes, stirring frequently to coat the rice with oil.
- Add the water, raisins, cinnamon stick, salt, and black pepper to the saucepan. Bring to a boil.
- Once boiling, reduce the heat to low, cover the saucepan, and simmer for about 18-20 minutes, or until the rice is tender and the water is absorbed.
- Remove the saucepan from heat and let it sit, covered, for an additional 5 minutes.
- Fluff the rice with a fork, discard the cinnamon stick, and garnish with chopped parsley before serving.
