Ingredients

  • Basmati rice - 1 cup
  • Chicken broth - 2 cups
  • Olive oil - 2 tablespoons

  • Garlic - 2 cloves, minced
  • Carrot - 1 medium, diced
  • Bell pepper - 1 medium, diced
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Frozen peas - 1/2 cup
  • Fresh parsley - 2 tablespoons, chopped

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 20 minutes.
  2. In a medium saucepan, heat olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until translucent.
  3. Add the diced carrot and bell pepper to the saucepan, cooking for another 3-4 minutes until slightly softened.
  4. Stir in the ground cumin, ground coriander, salt, and black pepper, cooking for 1 minute until fragrant.
  5. Drain the soaked rice and add it to the saucepan, stirring to coat the rice with the spices and vegetables.
  6. Pour in the chicken broth and bring to a boil. Once boiling, reduce the heat to low, cover, and simmer for 15 minutes.
  7. After 15 minutes, remove the saucepan from heat and let it sit, covered, for an additional 5 minutes.
  8. Fluff the rice with a fork, gently folding in the frozen peas and chopped parsley before serving.
