- Ground cumin - 1 teaspoon
- Ground coriander - 1 teaspoon

- Black pepper - 1/4 teaspoon
- Frozen peas - 1/2 cup
- Fresh parsley - 2 tablespoons, chopped
Steps
- Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 20 minutes.
- In a medium saucepan, heat olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until translucent.
- Add the diced carrot and bell pepper to the saucepan, cooking for another 3-4 minutes until slightly softened.
- Stir in the ground cumin, ground coriander, salt, and black pepper, cooking for 1 minute until fragrant.
- Drain the soaked rice and add it to the saucepan, stirring to coat the rice with the spices and vegetables.
- Pour in the chicken broth and bring to a boil. Once boiling, reduce the heat to low, cover, and simmer for 15 minutes.
- After 15 minutes, remove the saucepan from heat and let it sit, covered, for an additional 5 minutes.
- Fluff the rice with a fork, gently folding in the frozen peas and chopped parsley before serving.
