- White vinegar - 120 milliliters
- Water - 60 milliliters
- Sugar - 2 tablespoons
- Salt - 1 teaspoon
- Red onion - 1 small, thinly sliced
- Whole black peppercorns - 1 teaspoon
- Mustard seeds - 1 teaspoon
- Bay leaf - 1
- Carrot - 1 small, julienned
- Fresh dill - 2 sprigs
Steps
- In a small saucepan, combine the white vinegar, water, sugar, and salt. Heat over medium heat, stirring until the sugar and salt dissolve completely.
- Add the sliced red onion, black peppercorns, mustard seeds, bay leaf, and julienned carrot to the saucepan. Bring the mixture to a simmer and cook for about 5 minutes.
- Remove the saucepan from the heat and let the pickling liquid cool to room temperature.
- In a clean glass jar, layer the herring fillets and fresh dill sprigs. Pour the cooled pickling liquid over the herring, ensuring the fish is fully submerged.
- Seal the jar tightly and refrigerate for at least 24 hours, preferably 48 hours, to allow the flavors to develop.
- Serve chilled as a snack or appetizer.
