  • White vinegar - 120 milliliters
  • Water - 60 milliliters
  • Sugar - 2 tablespoons
  • Salt - 1 teaspoon
  • Red onion - 1 small, thinly sliced
  • Whole black peppercorns - 1 teaspoon
  • Mustard seeds - 1 teaspoon
  • Bay leaf - 1
  • Carrot - 1 small, julienned
  • Fresh dill - 2 sprigs

Steps

  1. In a small saucepan, combine the white vinegar, water, sugar, and salt. Heat over medium heat, stirring until the sugar and salt dissolve completely.
  2. Add the sliced red onion, black peppercorns, mustard seeds, bay leaf, and julienned carrot to the saucepan. Bring the mixture to a simmer and cook for about 5 minutes.
  3. Remove the saucepan from the heat and let the pickling liquid cool to room temperature.
  4. In a clean glass jar, layer the herring fillets and fresh dill sprigs. Pour the cooled pickling liquid over the herring, ensuring the fish is fully submerged.
  5. Seal the jar tightly and refrigerate for at least 24 hours, preferably 48 hours, to allow the flavors to develop.
  6. Serve chilled as a snack or appetizer.
