  • Chicken breast - 200 grams
  • Chicken broth - 4 cups (960 ml)
  • Rice noodles - 100 grams
  • Fresh ginger - 1 tablespoon, sliced
  • Garlic - 2 cloves, minced
  • Onion - 1 medium, sliced
  • Carrots - 1 medium, julienned
  • Green onions - 2 stalks, chopped
  • Fresh cilantro - 1/4 cup, chopped
  • Lime - 1, cut into wedges
  • Soy sauce - 1 tablespoon
  • Fish sauce - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste
  • Chili flakes - optional, to taste

Steps

  1. In a large pot, bring the chicken broth to a simmer over medium heat.
  2. Add the sliced ginger, minced garlic, and sliced onion to the pot. Simmer for about 5 minutes to infuse the flavors.
  3. While the broth simmers, cook the rice noodles according to package instructions, then drain and set aside.
  4. Add the chicken breast to the simmering broth and cook for 10-12 minutes or until fully cooked. Remove the chicken, shred it, and set aside.
  5. Add the julienned carrots to the broth and cook for an additional 5 minutes until tender.
  6. Return the shredded chicken to the pot, then stir in the soy sauce and fish sauce. Season with salt and black pepper to taste.
  7. To serve, divide the cooked rice noodles between two bowls, ladle the hot soup over the noodles, and garnish with chopped green onions and cilantro.
  8. Serve with lime wedges on the side and sprinkle with chili flakes if desired.
