- Zucchini - 2 medium-sized (about 400g)
- Fresh basil leaves - 50g
- Garlic - 2 cloves
- Pine nuts - 30g
- Parmesan cheese - 30g, grated
- Olive oil - 60ml
- Lemon juice - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
Steps
- Spiralize the zucchini using a spiralizer or a vegetable peeler to create 'zoodles'. Set aside.
- In a food processor, combine basil leaves, garlic, pine nuts, and grated Parmesan cheese. Pulse until finely chopped.
- With the processor running, slowly drizzle in olive oil until the mixture is smooth and creamy. Add lemon juice, salt, and pepper to taste, then pulse again to combine.
- In a large skillet, heat a small amount of olive oil over medium heat. Add the zoodles and sauté for about 2-3 minutes until just tender.
- Remove the skillet from heat and toss the zoodles with the prepared pesto until well coated.
