Ingredients

  • Zucchini - 2 medium-sized (about 400g)
  • Fresh basil leaves - 50g
  • Garlic - 2 cloves
  • Pine nuts - 30g
  • Parmesan cheese - 30g, grated
  • Olive oil - 60ml
  • Lemon juice - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Spiralize the zucchini using a spiralizer or a vegetable peeler to create 'zoodles'. Set aside.
  2. In a food processor, combine basil leaves, garlic, pine nuts, and grated Parmesan cheese. Pulse until finely chopped.
  3. With the processor running, slowly drizzle in olive oil until the mixture is smooth and creamy. Add lemon juice, salt, and pepper to taste, then pulse again to combine.
  4. In a large skillet, heat a small amount of olive oil over medium heat. Add the zoodles and sauté for about 2-3 minutes until just tender.
  5. Remove the skillet from heat and toss the zoodles with the prepared pesto until well coated.
  6. Serve immediately, garnished with additional Parmesan and pine nuts if desired.
