Ingredients

  • Zucchini - 2 medium
  • Fresh basil - 1 cup (packed)
  • Pine nuts - 2 tablespoons
  • Garlic - 1 clove
  • Olive oil - 3 tablespoons
  • Parmesan cheese - 30 grams (grated)
  • Cherry tomatoes - 1 cup (halved)
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Spiralize the zucchini using a spiralizer or a vegetable peeler to create zucchini noodles (zoodles). Set aside.
  2. In a food processor, combine fresh basil, pine nuts, garlic, and a pinch of salt. Pulse until finely chopped.
  3. With the food processor running, slowly drizzle in the olive oil until the mixture is smooth and creamy.
  4. Add grated Parmesan cheese to the pesto and pulse a few more times until well incorporated.
