Ingredients

  • Zucchini - 2 medium
  • Fresh basil leaves - 50 grams
  • Pine nuts - 30 grams
  • Parmesan cheese - 30 grams, grated
  • Garlic - 1 clove
  • Olive oil - 60 ml
  • Lemon juice - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste
  • Cherry tomatoes - 150 grams, halved
  • Grilled chicken breast - 200 grams, sliced (optional)

Steps

  1. Using a spiralizer, spiralize the zucchini into zoodles and set aside.
  2. In a food processor, combine basil leaves, pine nuts, garlic, Parmesan cheese, olive oil, lemon juice, salt, and black pepper. Blend until smooth to create the pesto.
