Ingredients

  • Whole grain bread - 4 slices
  • Turkey breast (sliced, Halal) - 200 grams
  • Basil pesto - 4 tablespoons
  • Fresh mozzarella cheese (sliced) - 100 grams
  • Tomato (sliced) - 1 medium
  • Spinach leaves - 1 cup
  • Olive oil - 2 tablespoons
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Preheat a panini press or a skillet over medium heat.
  2. Spread 1 tablespoon of basil pesto on one side of each slice of bread.
  3. Layer the turkey slices evenly on two of the pesto-covered bread slices.
  4. Add the sliced mozzarella cheese, tomato slices, and spinach leaves on top of the turkey.
  5. Season with salt and black pepper to taste.
  6. Top with the remaining two slices of bread, pesto side down.
  7. Brush the outside of the sandwiches with olive oil.
  8. Place the sandwiches in the preheated panini press or skillet.
  9. If using a skillet, press down with a spatula and cook for about 3-4 minutes on each side, until the bread is golden brown and the cheese is melted.
  10. Remove from heat, slice in half, and serve warm.
