Ingredients

  • Shrimp (peeled and deveined) - 300 grams
  • Fresh basil - 30 grams
  • Pine nuts - 30 grams
  • Garlic - 2 cloves
  • Parmesan cheese (grated) - 30 grams
  • Olive oil - 60 ml
  • Lemon juice - 15 ml
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Wooden skewers - 4 (soaked in water for 30 minutes)

Steps

  1. In a food processor, combine fresh basil, pine nuts, garlic, and Parmesan cheese. Pulse until finely chopped.
  2. With the processor running, slowly drizzle in olive oil until the mixture is smooth. Add lemon juice, salt, and black pepper, and blend until well combined.
  3. In a mixing bowl, add the shrimp and half of the prepared pesto. Toss to coat the shrimp evenly. Let marinate for 10 minutes.
  4. Preheat the grill or grill pan over medium-high heat.
  5. Thread the marinated shrimp onto the soaked wooden skewers, about 4-5 shrimp per skewer.
  6. Grill the skewers for 2-3 minutes on each side, or until the shrimp are opaque and cooked through.
  7. Serve the skewers hot with the remaining pesto drizzled on top.
