Ingredients
- Shrimp (peeled and deveined) - 300 grams
- Fresh basil - 30 grams
- Pine nuts - 30 grams
- Garlic - 2 cloves
- Parmesan cheese (grated) - 30 grams
- Olive oil - 60 ml
- Lemon juice - 15 ml
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Wooden skewers - 4 (soaked in water for 30 minutes)
Steps
- In a food processor, combine fresh basil, pine nuts, garlic, and Parmesan cheese. Pulse until finely chopped.
- With the processor running, slowly drizzle in olive oil until the mixture is smooth. Add lemon juice, salt, and black pepper, and blend until well combined.
- In a mixing bowl, add the shrimp and half of the prepared pesto. Toss to coat the shrimp evenly. Let marinate for 10 minutes.
- Preheat the grill or grill pan over medium-high heat.
- Thread the marinated shrimp onto the soaked wooden skewers, about 4-5 shrimp per skewer.
- Grill the skewers for 2-3 minutes on each side, or until the shrimp are opaque and cooked through.
- Serve the skewers hot with the remaining pesto drizzled on top.
