Ingredients

  • Flatbread - 2 pieces (approx. 200g each)
  • Chicken breast - 200g
  • Basil pesto - 4 tablespoons
  • Cherry tomatoes - 100g, halved
  • Mozzarella cheese - 100g, shredded
  • Olive oil - 2 tablespoons
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh basil leaves - for garnish

Steps

  1. Preheat your grill or skillet over medium heat.
  2. Season the chicken breast with salt and black pepper, then drizzle with 1 tablespoon of olive oil.
  3. Grill the chicken for about 6-7 minutes on each side, or until fully cooked and no longer pink in the center. Remove from heat and let it rest for a few minutes before slicing.
  4. While the chicken is resting, prepare the flatbreads. Spread 2 tablespoons of basil pesto evenly on each flatbread.
  5. Once the chicken is sliced, distribute the chicken pieces evenly on top of the pesto-covered flatbreads.
  6. Add the halved cherry tomatoes and sprinkle the shredded mozzarella cheese over the top.
  7. Drizzle with the remaining tablespoon of olive oil and place the flatbreads on the grill or in a preheated oven at 200°C (400°F) for about 5-7 minutes, or until the cheese is melted and bubbly.
  8. Remove from heat, garnish with fresh basil leaves, slice, and serve warm.
