- Flatbread - 2 pieces (approx. 200g each)
- Chicken breast - 200g
- Basil pesto - 4 tablespoons
- Cherry tomatoes - 100g, halved
- Mozzarella cheese - 100g, shredded
- Olive oil - 2 tablespoons
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh basil leaves - for garnish
Steps
- Preheat your grill or skillet over medium heat.
- Season the chicken breast with salt and black pepper, then drizzle with 1 tablespoon of olive oil.
- Grill the chicken for about 6-7 minutes on each side, or until fully cooked and no longer pink in the center. Remove from heat and let it rest for a few minutes before slicing.
- While the chicken is resting, prepare the flatbreads. Spread 2 tablespoons of basil pesto evenly on each flatbread.
- Once the chicken is sliced, distribute the chicken pieces evenly on top of the pesto-covered flatbreads.
- Add the halved cherry tomatoes and sprinkle the shredded mozzarella cheese over the top.
- Drizzle with the remaining tablespoon of olive oil and place the flatbreads on the grill or in a preheated oven at 200°C (400°F) for about 5-7 minutes, or until the cheese is melted and bubbly.
- Remove from heat, garnish with fresh basil leaves, slice, and serve warm.
