- Puff pastry - 1 sheet (about 250g)
- Fresh basil pesto - 100g
- Cherry tomatoes - 200g, halved
- Mozzarella cheese - 100g, sliced
- Olive oil - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
- Fresh basil leaves - for garnish
Steps
- Preheat the oven to 200°C (400°F).
- Roll out the puff pastry on a lightly floured surface to fit a 20cm (8-inch) tart pan.
- Place the rolled pastry into the tart pan, trimming any excess pastry hanging over the edges.
- Spread the basil pesto evenly over the pastry base.
- Arrange the halved cherry tomatoes over the pesto, cut side up.
- Place slices of mozzarella cheese on top of the tomatoes.
- Drizzle with olive oil and season with salt and black pepper.
