Ingredients

  • Puff pastry - 1 sheet (about 250g)
  • Fresh basil pesto - 100g
  • Cherry tomatoes - 200g, halved
  • Mozzarella cheese - 100g, sliced
  • Olive oil - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh basil leaves - for garnish

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Roll out the puff pastry on a lightly floured surface to fit a 20cm (8-inch) tart pan.
  3. Place the rolled pastry into the tart pan, trimming any excess pastry hanging over the edges.
  4. Spread the basil pesto evenly over the pastry base.
  5. Arrange the halved cherry tomatoes over the pesto, cut side up.
  6. Place slices of mozzarella cheese on top of the tomatoes.
  7. Drizzle with olive oil and season with salt and black pepper.
  8. Bake in the preheated oven for about 20 minutes or until the pastry is golden brown and the cheese is bubbly.
  9. Remove from the oven and let it cool slightly before garnishing with fresh basil leaves.
  10. Slice and serve warm.
