  • Carrots, diced - 100 grams
  • Celery, diced - 100 grams
  • Onion, chopped - 50 grams
  • Garlic, minced - 2 cloves
  • Gluten-free all-purpose flour - 50 grams
  • Chicken broth - 500 ml
  • Olive oil - 1 tablespoon
  • Thyme, dried - 1 teaspoon
  • Rosemary, dried - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Frozen peas - 50 grams
  • Gluten-free pie crust - 1 sheet

Steps

  1. Preheat the oven to 200°C (400°F).
  2. In a large skillet, heat olive oil over medium heat. Add the chopped onion and garlic, sauté for about 2-3 minutes until fragrant.
  3. Add the diced chicken thighs to the skillet, cooking until browned on all sides, about 5-7 minutes.
  4. Stir in the carrots, celery, thyme, rosemary, salt, and pepper. Cook for another 5 minutes until the vegetables start to soften.
  5. Sprinkle the gluten-free flour over the chicken and vegetables, stirring well to coat evenly.
  6. Gradually pour in the chicken broth, stirring continuously to prevent lumps. Bring to a simmer and cook for about 10 minutes until the mixture thickens slightly.
  7. Add the frozen peas and mix well. Remove the skillet from heat.
  8. Transfer the chicken and vegetable mixture to a pie dish, spreading it evenly.
  9. Roll out the gluten-free pie crust over the filling, trimming any excess and crimping the edges to seal.
  10. Cut a few slits in the top of the crust to allow steam to escape.
  11. Bake in the preheated oven for 25-30 minutes, or until the crust is golden brown.
