- Olive oil - 1 tablespoon

Steps
- Preheat the oven to 200°C (400°F).
- In a large skillet, heat olive oil over medium heat. Add the chopped onion and garlic, sauté for about 2-3 minutes until fragrant.
- Add the diced chicken thighs to the skillet, cooking until browned on all sides, about 5-7 minutes.
- Stir in the carrots, celery, thyme, rosemary, salt, and pepper. Cook for another 5 minutes until the vegetables start to soften.
- Sprinkle the gluten-free flour over the chicken and vegetables, stirring well to coat evenly.
- Gradually pour in the chicken broth, stirring continuously to prevent lumps. Bring to a simmer and cook for about 10 minutes until the mixture thickens slightly.
- Add the frozen peas and mix well. Remove the skillet from heat.
- Transfer the chicken and vegetable mixture to a pie dish, spreading it evenly.
- Roll out the gluten-free pie crust over the filling, trimming any excess and crimping the edges to seal.
- Cut a few slits in the top of the crust to allow steam to escape.
- Bake in the preheated oven for 25-30 minutes, or until the crust is golden brown.
- Remove from the oven and let it cool for a few minutes before serving.
