Ingredients

  • Penne pasta - 200 grams
  • Olive oil - 2 tablespoons
  • Garlic - 3 cloves, minced
  • Onion - 1 medium, diced
  • Crushed red pepper flakes - 1/2 teaspoon
  • Vodka - 100 ml
  • Canned crushed tomatoes - 400 grams
  • Heavy cream - 100 ml
  • Parmesan cheese - 50 grams, grated
  • Fresh basil - a handful, chopped
  • Salt - to taste
  • Black pepper - to taste
  • Cooked chicken breast - 150 grams, diced

Steps

  1. Cook the penne pasta in a large pot of salted boiling water according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes.
  3. Add the minced garlic and crushed red pepper flakes to the skillet, cooking for an additional 1-2 minutes until fragrant.
  4. Pour in the vodka and let it simmer for about 3-4 minutes to allow the alcohol to cook off.
  5. Stir in the canned crushed tomatoes and bring the mixture to a simmer. Cook for 5-7 minutes until slightly thickened.
  6. Lower the heat and add the heavy cream, stirring until well combined. Let it cook for another 2-3 minutes.
  7. Add the cooked chicken breast, salt, and black pepper. Stir to combine and heat through for another 2 minutes.
  8. Add the cooked penne pasta to the skillet and toss until the pasta is well coated with the sauce.
  9. Remove from heat, stir in the grated Parmesan cheese and chopped basil. Serve hot with extra basil and cheese on top if desired.
