- Penne pasta - 200 grams
- Olive oil - 2 tablespoons
- Garlic - 3 cloves, minced
- Onion - 1 medium, diced
- Crushed red pepper flakes - 1/2 teaspoon
- Vodka - 100 ml
- Canned crushed tomatoes - 400 grams
- Heavy cream - 100 ml
- Parmesan cheese - 50 grams, grated
- Fresh basil - a handful, chopped
- Salt - to taste
- Black pepper - to taste
- Cooked chicken breast - 150 grams, diced
Steps
- Cook the penne pasta in a large pot of salted boiling water according to package instructions until al dente. Drain and set aside.
- In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes.
- Add the minced garlic and crushed red pepper flakes to the skillet, cooking for an additional 1-2 minutes until fragrant.
- Pour in the vodka and let it simmer for about 3-4 minutes to allow the alcohol to cook off.
- Stir in the canned crushed tomatoes and bring the mixture to a simmer. Cook for 5-7 minutes until slightly thickened.
- Lower the heat and add the heavy cream, stirring until well combined. Let it cook for another 2-3 minutes.
- Add the cooked chicken breast, salt, and black pepper. Stir to combine and heat through for another 2 minutes.
- Add the cooked penne pasta to the skillet and toss until the pasta is well coated with the sauce.
- Remove from heat, stir in the grated Parmesan cheese and chopped basil. Serve hot with extra basil and cheese on top if desired.
