Ingredients

  • Penne pasta - 200g
  • Olive oil - 2 tablespoons
  • Garlic - 4 cloves, minced
  • Red chili flakes - 1 teaspoon
  • Canned diced tomatoes - 400g
  • Salt - 1/2 teaspoon
  • Black pepper - to taste
  • Fresh parsley - 2 tablespoons, chopped
  • Nutritional yeast - 2 tablespoons (optional, for a cheesy flavor)

Steps

  1. Bring a large pot of salted water to a boil and cook the penne pasta according to package instructions until al dente.
  2. While the pasta is cooking, heat the olive oil in a large skillet over medium heat.
  3. Add the minced garlic and red chili flakes to the skillet, sautéing for about 1-2 minutes until fragrant but not browned.
  4. Pour in the canned diced tomatoes, adding salt and black pepper. Stir to combine and let simmer for about 5-7 minutes, allowing the sauce to thicken slightly.
  5. Once the pasta is cooked, drain it and add it directly to the skillet with the tomato sauce. Toss well to coat the pasta evenly.
  6. Remove from heat and stir in the chopped fresh parsley and nutritional yeast, if using.
  7. Serve immediately, garnished with additional parsley if desired.
