- Olive oil - 2 tablespoons
- Garlic - 4 cloves, minced
- Red chili flakes - 1 teaspoon
- Canned diced tomatoes - 400g
- Salt - 1/2 teaspoon
- Black pepper - to taste
- Fresh parsley - 2 tablespoons, chopped
- Nutritional yeast - 2 tablespoons (optional, for a cheesy flavor)
Steps
- Bring a large pot of salted water to a boil and cook the penne pasta according to package instructions until al dente.
- While the pasta is cooking, heat the olive oil in a large skillet over medium heat.
- Add the minced garlic and red chili flakes to the skillet, sautéing for about 1-2 minutes until fragrant but not browned.
- Pour in the canned diced tomatoes, adding salt and black pepper. Stir to combine and let simmer for about 5-7 minutes, allowing the sauce to thicken slightly.
- Once the pasta is cooked, drain it and add it directly to the skillet with the tomato sauce. Toss well to coat the pasta evenly.
- Remove from heat and stir in the chopped fresh parsley and nutritional yeast, if using.
- Serve immediately, garnished with additional parsley if desired.
