Ingredients

  • Trout fillets - 2 pieces (approximately 200g each)
  • Pecans - 1/2 cup (finely chopped)
  • Almond flour - 1/4 cup
  • Egg - 1 large
  • Olive oil - 2 tablespoons
  • Garlic powder - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Lemon wedges - for serving

Steps

  1. Preheat the oven to 200°C (400°F).
  2. In a shallow bowl, whisk the egg until well beaten.
  3. In another bowl, combine the chopped pecans, almond flour, garlic powder, paprika, salt, and black pepper.
  4. Dip each trout fillet into the egg, ensuring it's fully coated, then press it into the pecan mixture to create a crust.
  5. Heat 1 tablespoon of olive oil in a large oven-safe skillet over medium heat.
  6. Once the oil is hot, place the pecan-crusted trout fillets in the skillet and cook for 3-4 minutes until the crust is golden brown.
  7. Carefully flip the trout fillets and drizzle the remaining tablespoon of olive oil on top.
  8. Transfer the skillet to the preheated oven and bake for an additional 10-12 minutes, or until the trout is cooked through and flakes easily with a fork.
  9. Remove from the oven and serve immediately with lemon wedges.
