Ingredients

  • Jasmine rice - 1 cup
  • Water - 2 cups
  • Peanut butter - 4 tablespoons
  • Soy sauce - 2 tablespoons
  • Honey - 1 tablespoon
  • Vegetable oil - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Green onions - 2, chopped
  • Bell pepper - 1/2, diced
  • Carrot - 1, grated
  • Salt - to taste
  • Black pepper - to taste
  • Chili flakes - optional, to taste

Steps

  1. Rinse the jasmine rice under cold water until the water runs clear, then drain.
  2. In a medium saucepan, combine the rinsed rice and 2 cups of water. Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes or until the water is absorbed and the rice is tender.
  3. While the rice is cooking, heat the vegetable oil in a frying pan over medium heat. Add minced garlic and sauté for 1 minute until fragrant.
  4. Add diced bell pepper and grated carrot to the pan. Stir-fry for about 3-4 minutes until the vegetables are tender.
  5. In a small bowl, mix together the peanut butter, soy sauce, honey, salt, and black pepper to create a sauce. If desired, add chili flakes for a bit of heat.
  6. Once the rice is cooked, fluff it with a fork and add it to the frying pan with the sautéed vegetables. Pour the peanut sauce over the rice and mix well to combine everything evenly.
  7. Cook for an additional 2-3 minutes, stirring constantly, until everything is heated through.
  8. Serve hot, garnished with chopped green onions.
