- Jasmine rice - 1 cup
- Water - 2 cups
- Peanut butter - 4 tablespoons
- Soy sauce - 2 tablespoons
- Honey - 1 tablespoon
- Vegetable oil - 1 tablespoon
- Garlic - 2 cloves, minced
- Green onions - 2, chopped
- Bell pepper - 1/2, diced
- Carrot - 1, grated
- Salt - to taste
- Black pepper - to taste
- Chili flakes - optional, to taste
Steps
- Rinse the jasmine rice under cold water until the water runs clear, then drain.
- In a medium saucepan, combine the rinsed rice and 2 cups of water. Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes or until the water is absorbed and the rice is tender.
- While the rice is cooking, heat the vegetable oil in a frying pan over medium heat. Add minced garlic and sauté for 1 minute until fragrant.
- Add diced bell pepper and grated carrot to the pan. Stir-fry for about 3-4 minutes until the vegetables are tender.
- In a small bowl, mix together the peanut butter, soy sauce, honey, salt, and black pepper to create a sauce. If desired, add chili flakes for a bit of heat.
- Once the rice is cooked, fluff it with a fork and add it to the frying pan with the sautéed vegetables. Pour the peanut sauce over the rice and mix well to combine everything evenly.
- Cook for an additional 2-3 minutes, stirring constantly, until everything is heated through.
- Serve hot, garnished with chopped green onions.
