- Sugar-free dark chocolate - 100 grams
- Natural peanut butter (no added sugar) - 60 grams
- Coconut oil - 1 tablespoon (15 ml)
- Erythritol (or preferred low-carb sweetener) - 2 tablespoons (30 grams)
- Vanilla extract - 1 teaspoon (5 ml)
- Sea salt - a pinch
Steps
- Melt the sugar-free dark chocolate and coconut oil together in a microwave-safe bowl in 30-second intervals, stirring until smooth.
- Line a muffin tin with 2 silicone or paper liners.
- Pour half of the melted chocolate mixture into each liner, swirling to coat the bottom evenly. Place the muffin tin in the freezer for 10 minutes to set.
- In a separate bowl, mix the peanut butter, erythritol, vanilla extract, and a pinch of sea salt until well combined.
- Once the chocolate bottoms are set, remove the muffin tin from the freezer and evenly distribute the peanut butter mixture on top of the chocolate in each liner.
- Pour the remaining melted chocolate over the peanut butter layer, ensuring it covers the peanut butter completely.
- Return the muffin tin to the freezer for another 10-15 minutes until fully set.
- Carefully remove the peanut butter cups from the liners and enjoy!
