  • Sugar-free dark chocolate - 100 grams
  • Natural peanut butter (no added sugar) - 60 grams
  • Coconut oil - 1 tablespoon (15 ml)
  • Erythritol (or preferred low-carb sweetener) - 2 tablespoons (30 grams)
  • Vanilla extract - 1 teaspoon (5 ml)
  • Sea salt - a pinch

Steps

  1. Melt the sugar-free dark chocolate and coconut oil together in a microwave-safe bowl in 30-second intervals, stirring until smooth.
  2. Line a muffin tin with 2 silicone or paper liners.
  3. Pour half of the melted chocolate mixture into each liner, swirling to coat the bottom evenly. Place the muffin tin in the freezer for 10 minutes to set.
  4. In a separate bowl, mix the peanut butter, erythritol, vanilla extract, and a pinch of sea salt until well combined.
  5. Once the chocolate bottoms are set, remove the muffin tin from the freezer and evenly distribute the peanut butter mixture on top of the chocolate in each liner.
  6. Pour the remaining melted chocolate over the peanut butter layer, ensuring it covers the peanut butter completely.
  7. Return the muffin tin to the freezer for another 10-15 minutes until fully set.
  8. Carefully remove the peanut butter cups from the liners and enjoy!
