  • Coconut oil - 60 grams, melted
  • Maple syrup - 2 tablespoons
  • Salt - 1/4 teaspoon
  • Peaches - 2 medium, sliced
  • Honey or agave syrup - 1 tablespoon (optional, for extra sweetness)
  • Cornstarch - 1 tablespoon
  • Vanilla extract - 1/2 teaspoon
  • Cinnamon - 1/4 teaspoon

Steps

  1. Preheat your oven to 180°C (350°F).
  2. In a mixing bowl, combine almond flour, melted coconut oil, maple syrup, and salt to form a dough.
  3. Press the dough into a 20 cm (8-inch) tart pan evenly across the bottom and up the sides. Prick the bottom with a fork.
  4. Bake the crust in the preheated oven for 10-12 minutes, or until lightly golden. Remove and let it cool.
  5. In another bowl, toss the sliced peaches with honey/agave syrup (if using), cornstarch, vanilla extract, and cinnamon until well combined.
  6. Arrange the peach mixture evenly over the cooled tart crust.
  7. Return the tart to the oven and bake for an additional 25-30 minutes, until the peaches are tender and the juices are bubbling.
