Ingredients

  • Pork chops - 2 (about 200g each)
  • Fresh peaches - 2, pitted and diced
  • Honey - 2 tablespoons
  • Soy sauce - 1 tablespoon
  • Apple cider vinegar - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Olive oil - 1 tablespoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh thyme - 1 teaspoon, chopped

Steps

  1. In a small saucepan over medium heat, combine the diced peaches, honey, soy sauce, apple cider vinegar, minced garlic, and thyme. Cook for about 10 minutes until the peaches are soft and the mixture thickens slightly.
  2. While the glaze is cooking, season the pork chops with salt and black pepper on both sides.
  3. Heat olive oil in a skillet over medium-high heat. Once hot, add the pork chops and cook for about 4-5 minutes on each side, or until they reach an internal temperature of 145°F (63°C).
  4. Once the pork chops are cooked, pour the peach glaze over them and let it simmer for an additional 2-3 minutes.
  5. Remove from heat and let rest for a few minutes before serving. Serve the pork chops with extra glaze drizzled on top.
