  • Apple cider vinegar - 1 tablespoon (15ml)
  • Garlic powder - 1 teaspoon (5g)
  • Paprika - 1 teaspoon (5g)
  • Salt - 1 teaspoon (5g)
  • Black pepper - 1/2 teaspoon (2g)
  • Stevia or erythritol - 1 tablespoon (15g)
  • Fresh thyme - 1 teaspoon (5g, chopped)

Steps

  1. Preheat your grill or skillet over medium-high heat.
  2. In a small bowl, mix olive oil, apple cider vinegar, garlic powder, paprika, salt, and black pepper to create a marinade.
  3. Coat the pork chops with the marinade and let them sit for about 10 minutes to absorb the flavors.
  4. While the pork is marinating, prepare the peach glaze by combining diced peaches, stevia or erythritol, and fresh thyme in a small saucepan over medium heat.
  5. Cook the peach mixture for about 5-7 minutes until the peaches soften and the sauce thickens slightly.
  6. Grill or pan-sear the pork chops for about 4-5 minutes on each side, or until they reach an internal temperature of 63°C (145°F).
