Ingredients

  • Chicken breast - 2 pieces (about 300g total)
  • Fresh peaches - 2 medium, diced
  • Honey - 2 tablespoons
  • Soy sauce - 1 tablespoon (ensure it's kosher)
  • Olive oil - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Fresh ginger - 1 teaspoon, grated
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh basil - 2 tablespoons, chopped (for garnish)

Steps

  1. Preheat your oven to 200°C (400°F).
  2. In a small saucepan, combine the diced peaches, honey, soy sauce, minced garlic, grated ginger, salt, and black pepper. Cook over medium heat for about 5-7 minutes until the peaches are soft and the mixture thickens slightly.
  3. While the peach glaze is cooking, heat the olive oil in an oven-safe skillet over medium-high heat.
  4. Season the chicken breasts with salt and pepper on both sides, then sear them in the hot skillet for about 3-4 minutes on each side until golden brown.
  5. Once the chicken is browned, pour the peach glaze over the chicken in the skillet, making sure to coat each piece well.
  6. Transfer the skillet to the preheated oven and bake for an additional 15-20 minutes or until the chicken is cooked through (internal temperature should reach 75°C or 165°F).
  7. Remove the skillet from the oven, let it rest for a few minutes, then garnish with fresh basil before serving.
