Ingredients

  • Gluten-free all-purpose flour - 120 grams
  • Unsalted butter - 60 grams, cold and cubed
  • Granulated sugar - 30 grams
  • Ice water - 2 tablespoons
  • Fresh peaches - 2 medium, sliced
  • Brown sugar - 1 tablespoon
  • Ground cinnamon - 1/2 teaspoon
  • Lemon juice - 1 teaspoon
  • Egg - 1, beaten (for egg wash)
  • Salt - 1/4 teaspoon

Steps

  1. In a mixing bowl, combine the gluten-free flour, granulated sugar, and salt. Add the cold, cubed butter and mix until the mixture resembles coarse crumbs.
  2. Gradually add the ice water, one tablespoon at a time, mixing until the dough comes together. Form the dough into a disk, wrap it in plastic wrap, and refrigerate for at least 30 minutes.
  3. Preheat the oven to 190°C (375°F). Line a baking sheet with parchment paper.
  4. In another bowl, combine the sliced peaches, brown sugar, ground cinnamon, and lemon juice. Toss gently to coat the peaches evenly.
  5. On a lightly floured surface, roll out the chilled dough into a 12-inch circle. Transfer it to the prepared baking sheet.
  6. Arrange the peach mixture in the center of the dough, leaving a 2-inch border. Fold the edges of the dough over the peaches, pleating as necessary.
  7. Brush the edges of the dough with the beaten egg for a golden finish.
  8. Bake in the preheated oven for 25-30 minutes, or until the crust is golden brown and the peaches are soft.
  9. Remove from the oven and let it cool slightly before slicing and serving.
