  • Ripe peaches - 2 medium, sliced
  • Eggs - 2 large
  • Milk (dairy or dairy-free) - 120 ml
  • Vanilla extract - 1 teaspoon
  • Cinnamon - 1/2 teaspoon
  • Butter or coconut oil - 2 tablespoons
  • Maple syrup - for serving
  • Powdered sugar - for dusting (optional)

Steps

  1. In a shallow bowl, whisk together the eggs, milk, vanilla extract, and cinnamon until well combined.
  2. Heat a non-stick skillet over medium heat and add 1 tablespoon of butter or coconut oil.
  3. Dip each slice of gluten-free bread into the egg mixture, allowing it to soak for a few seconds on each side.
  4. Place the soaked bread slices in the skillet and cook for 3-4 minutes on each side until golden brown and cooked through.
  5. In the same skillet, add the remaining tablespoon of butter or coconut oil and the sliced peaches. Cook for about 3-5 minutes until the peaches are tender and slightly caramelized.
