Ingredients

  • Fresh peaches - 3 medium (about 450g), peeled and sliced
  • Maple syrup - 2 tablespoons (30ml)
  • Lemon juice - 1 tablespoon (15ml)
  • Almond flour - 1/4 cup (30g)
  • Rolled oats - 1/3 cup (30g)
  • Coconut oil - 2 tablespoons (30g), melted
  • Brown sugar - 2 tablespoons (25g)
  • Cinnamon - 1/2 teaspoon (2g)
  • Salt - a pinch

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a mixing bowl, combine the sliced peaches, maple syrup, and lemon juice. Toss until the peaches are well coated.
  3. Transfer the peach mixture to a small baking dish (approximately 20cm x 15cm).
  4. In another bowl, mix together the almond flour, rolled oats, melted coconut oil, brown sugar, cinnamon, and a pinch of salt until crumbly.
  5. Sprinkle the oat mixture evenly over the peaches in the baking dish.
  6. Bake in the preheated oven for 25 minutes or until the topping is golden brown and the peaches are bubbling.
  7. Remove from the oven and let cool for a few minutes before serving.
