- coconut sugar - 1/4 cup (50g)
- baking powder - 1 tsp
- baking soda - 1/2 tsp
- salt - 1/4 tsp
- canned coconut milk - 1/2 cup (120ml)
- coconut oil - 2 tbsp (30g), melted
- vanilla extract - 1 tsp
- peach, diced - 1 medium (about 150g)
- shredded unsweetened coconut - 1/4 cup (20g)
Steps
- Preheat your oven to 180°C (350°F) and line a muffin tin with paper liners.
- In a mixing bowl, combine the all-purpose flour, coconut sugar, baking powder, baking soda, and salt.
- In another bowl, whisk together the canned coconut milk, melted coconut oil, and vanilla extract until well combined.
- Pour the wet ingredients into the dry ingredients and mix until just combined. Be careful not to overmix.
- Fold in the diced peach and shredded coconut gently into the batter.
- Divide the batter evenly among the muffin cups, filling each about 2/3 full.
- Bake in the preheated oven for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
