  • coconut sugar - 1/4 cup (50g)
  • baking powder - 1 tsp
  • baking soda - 1/2 tsp
  • salt - 1/4 tsp
  • canned coconut milk - 1/2 cup (120ml)
  • coconut oil - 2 tbsp (30g), melted
  • vanilla extract - 1 tsp
  • peach, diced - 1 medium (about 150g)
  • shredded unsweetened coconut - 1/4 cup (20g)

Steps

  1. Preheat your oven to 180°C (350°F) and line a muffin tin with paper liners.
  2. In a mixing bowl, combine the all-purpose flour, coconut sugar, baking powder, baking soda, and salt.
  3. In another bowl, whisk together the canned coconut milk, melted coconut oil, and vanilla extract until well combined.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined. Be careful not to overmix.
  5. Fold in the diced peach and shredded coconut gently into the batter.
  6. Divide the batter evenly among the muffin cups, filling each about 2/3 full.
  7. Bake in the preheated oven for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
