Ingredients

  • Challah bread - 4 slices
  • Peaches - 2 medium, sliced
  • Brown sugar - 2 tablespoons
  • Cinnamon - 1 teaspoon
  • Nutmeg - 1/4 teaspoon
  • Eggs - 2 large
  • Milk - 1/2 cup
  • Vanilla extract - 1 teaspoon
  • Butter - 2 tablespoons
  • Oats - 1/4 cup
  • All-purpose flour - 2 tablespoons
  • Salt - 1/4 teaspoon
  • Maple syrup - for serving

Steps

  1. In a medium bowl, combine sliced peaches, 1 tablespoon brown sugar, 1/2 teaspoon cinnamon, and nutmeg. Set aside to macerate for about 10 minutes.
  2. In another bowl, whisk together the eggs, milk, vanilla extract, and remaining 1 tablespoon brown sugar.
  3. In a separate small bowl, mix the oats, flour, salt, and remaining 1/2 teaspoon cinnamon to create the crumble topping.
  4. Heat a skillet over medium heat and melt 1 tablespoon of butter. Dip each slice of challah bread into the egg mixture, allowing it to soak for a few seconds on each side.
  5. Place the soaked bread into the skillet and cook for 3-4 minutes on each side, until golden brown. Remove from skillet and keep warm.
  6. In the same skillet, add the remaining tablespoon of butter, then add the macerated peaches. Cook for about 3-5 minutes until the peaches are tender.
  7. On each plate, layer the French toast, top with sautéed peaches, and sprinkle with the crumble topping. Drizzle with maple syrup before serving.
