Ingredients

  • fresh peaches - 2 cups, sliced
  • granulated sugar - 1/4 cup
  • all-purpose flour - 1 cup
  • rolled oats - 1/2 cup
  • unsalted butter - 1/4 cup, melted
  • baking powder - 1/2 teaspoon
  • cinnamon - 1/2 teaspoon
  • vanilla extract - 1 teaspoon
  • salt - 1/4 teaspoon
  • lemon juice - 1 tablespoon

Steps

  1. Preheat your oven to 180°C (350°F) and grease an 8x8 inch baking dish.
  2. In a mixing bowl, combine sliced peaches, 2 tablespoons of the sugar, and lemon juice. Toss gently and set aside to macerate for about 10 minutes.
  3. In another bowl, mix together the flour, rolled oats, remaining sugar, baking powder, cinnamon, and salt.
  4. Pour in the melted butter and vanilla extract, stirring until the mixture resembles coarse crumbs.
  5. Press half of the crumb mixture into the bottom of the prepared baking dish to form a crust.
  6. Spread the macerated peaches evenly over the crust, then sprinkle the remaining crumb mixture on top.
  7. Bake in the preheated oven for about 25-30 minutes or until the top is golden brown.
  8. Remove from the oven and let cool for at least 10 minutes before cutting into bars. Serve warm or at room temperature.
