- rolled oats - 1/2 cup
- unsalted butter - 1/4 cup, melted
- baking powder - 1/2 teaspoon
- cinnamon - 1/2 teaspoon
- vanilla extract - 1 teaspoon
- salt - 1/4 teaspoon
- lemon juice - 1 tablespoon
Steps
- Preheat your oven to 180°C (350°F) and grease an 8x8 inch baking dish.
- In a mixing bowl, combine sliced peaches, 2 tablespoons of the sugar, and lemon juice. Toss gently and set aside to macerate for about 10 minutes.
- In another bowl, mix together the flour, rolled oats, remaining sugar, baking powder, cinnamon, and salt.
- Pour in the melted butter and vanilla extract, stirring until the mixture resembles coarse crumbs.
- Press half of the crumb mixture into the bottom of the prepared baking dish to form a crust.
- Spread the macerated peaches evenly over the crust, then sprinkle the remaining crumb mixture on top.
- Bake in the preheated oven for about 25-30 minutes or until the top is golden brown.
- Remove from the oven and let cool for at least 10 minutes before cutting into bars. Serve warm or at room temperature.
