Ingredients

  • Almond flour - 1 cup
  • Coconut oil - 3 tablespoons, melted
  • Maple syrup - 2 tablespoons
  • Salt - 1/4 teaspoon
  • Peach - 1 medium, sliced
  • Mixed berries (blueberries, raspberries) - 1 cup
  • Coconut sugar - 1 tablespoon
  • Vanilla extract - 1/2 teaspoon
  • Cornstarch - 1 tablespoon

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a mixing bowl, combine almond flour, melted coconut oil, maple syrup, and salt. Mix until a dough forms.
  3. Press the dough into a 9-inch tart pan evenly across the bottom and up the sides. Prick the bottom with a fork to prevent bubbling.
  4. Bake the crust in the preheated oven for 10-12 minutes or until lightly golden. Remove and let cool.
  5. In another bowl, mix the sliced peaches, mixed berries, coconut sugar, vanilla extract, and cornstarch until well combined.
  6. Pour the fruit mixture into the cooled tart crust, spreading it evenly.
  7. Bake the tart for an additional 20-25 minutes, until the fruit is bubbly and the edges are slightly caramelized.
  8. Let the tart cool for at least 10 minutes before slicing and serving.
