  • coconut sugar - 1/3 cup (67g)
  • unsweetened applesauce - 1/3 cup (80g)
  • almond milk - 1/2 cup (120ml)
  • vanilla extract - 1 tsp
  • peach, diced - 1 medium (about 150g)
  • mixed berries (blueberries, raspberries) - 1/2 cup (75g)

Steps

  1. Preheat the oven to 180°C (350°F) and line a muffin tin with paper liners.
  2. In a large bowl, whisk together the all-purpose flour, baking powder, baking soda, salt, and coconut sugar until well combined.
  3. In another bowl, mix the unsweetened applesauce, almond milk, and vanilla extract until smooth.
