- 1 ripe peach, diced

- 1 tablespoon soy sauce
- 1 teaspoon smoked paprika

- 1/2 teaspoon black pepper
- 1/4 teaspoon salt
- 1 tablespoon olive oil
- Fresh cilantro for garnish (optional)
Steps
- In a bowl, combine diced peach, peach preserves, apple cider vinegar, soy sauce, smoked paprika, garlic powder, black pepper, and salt. Mix well to create the peach BBQ sauce.
- Clean the portobello mushrooms and remove the stems. Brush both sides with olive oil and season with a pinch of salt and black pepper.
- Place the mushrooms in a shallow dish and pour half of the peach BBQ sauce over them, making sure they are well coated. Let them marinate for 10 minutes.
- Preheat your grill or grill pan over medium heat. Once hot, place the marinated portobello mushrooms on the grill, gill side down.
- Grill for about 5-7 minutes, then flip the mushrooms and brush with more peach BBQ sauce. Grill for another 5-7 minutes until tender and slightly charred.
- Remove the mushrooms from the grill and let them rest for a minute. Serve topped with fresh cilantro and additional peach BBQ sauce on the side.
