Ingredients

  • 2 large portobello mushrooms
  • 1 ripe peach, diced
  • 1/4 cup peach preserves
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon soy sauce
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon salt
  • 1 tablespoon olive oil
  • Fresh cilantro for garnish (optional)

Steps

  1. In a bowl, combine diced peach, peach preserves, apple cider vinegar, soy sauce, smoked paprika, garlic powder, black pepper, and salt. Mix well to create the peach BBQ sauce.
  2. Clean the portobello mushrooms and remove the stems. Brush both sides with olive oil and season with a pinch of salt and black pepper.
  3. Place the mushrooms in a shallow dish and pour half of the peach BBQ sauce over them, making sure they are well coated. Let them marinate for 10 minutes.
  4. Preheat your grill or grill pan over medium heat. Once hot, place the marinated portobello mushrooms on the grill, gill side down.
  5. Grill for about 5-7 minutes, then flip the mushrooms and brush with more peach BBQ sauce. Grill for another 5-7 minutes until tender and slightly charred.
  6. Remove the mushrooms from the grill and let them rest for a minute. Serve topped with fresh cilantro and additional peach BBQ sauce on the side.
