Ingredients
- All-purpose flour - 100g
- Unsalted butter - 50g, chilled and cubed
- Powdered sugar - 25g
- Salt - 1/4 tsp
- Cold water - 3 tbsp
- Almond flour - 50g
- Granulated sugar - 30g
- Egg - 1 large
- Vanilla extract - 1 tsp
- Peaches - 2 medium, sliced
- Sliced almonds - 20g
Steps
- Preheat the oven to 180°C (350°F).
- In a bowl, combine the all-purpose flour, powdered sugar, and salt. Add the chilled butter and mix until the mixture resembles coarse crumbs.
- Stir in the cold water, one tablespoon at a time, until the dough comes together. Form the dough into a disk, wrap in plastic, and refrigerate for 30 minutes.
- In a separate bowl, mix the almond flour, granulated sugar, egg, and vanilla extract until smooth to create the almond filling.
- Roll out the chilled dough on a floured surface to fit a 20 cm tart pan. Press the dough into the pan and trim any excess.
- Spread the almond filling evenly over the crust, then arrange the sliced peaches on top.
- Sprinkle the sliced almonds over the peaches and bake in the preheated oven for 30-35 minutes until the filling is set and the crust is golden brown.
- Remove from the oven and let it cool for a few minutes before slicing and serving.
