Ingredients

  • All-purpose flour - 100g
  • Unsalted butter - 50g, chilled and cubed
  • Powdered sugar - 25g
  • Salt - 1/4 tsp
  • Cold water - 3 tbsp
  • Almond flour - 50g
  • Granulated sugar - 30g
  • Egg - 1 large
  • Vanilla extract - 1 tsp
  • Peaches - 2 medium, sliced
  • Sliced almonds - 20g

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a bowl, combine the all-purpose flour, powdered sugar, and salt. Add the chilled butter and mix until the mixture resembles coarse crumbs.
  3. Stir in the cold water, one tablespoon at a time, until the dough comes together. Form the dough into a disk, wrap in plastic, and refrigerate for 30 minutes.
  4. In a separate bowl, mix the almond flour, granulated sugar, egg, and vanilla extract until smooth to create the almond filling.
  5. Roll out the chilled dough on a floured surface to fit a 20 cm tart pan. Press the dough into the pan and trim any excess.
  6. Spread the almond filling evenly over the crust, then arrange the sliced peaches on top.
  7. Sprinkle the sliced almonds over the peaches and bake in the preheated oven for 30-35 minutes until the filling is set and the crust is golden brown.
  8. Remove from the oven and let it cool for a few minutes before slicing and serving.
