  • maple syrup - 3 tablespoons
  • unsweetened almond milk - 100 milliliters
  • coconut oil - 2 tablespoons (melted)
  • vanilla extract - 1 teaspoon
  • ripe peaches - 1 medium (diced)
  • sliced almonds - 2 tablespoons

Steps

  1. Preheat the oven to 180°C (350°F) and line a muffin tin with paper liners.
  2. In a large bowl, whisk together the almond flour, oat flour, baking powder, baking soda, cinnamon, and salt.
  3. In another bowl, mix the maple syrup, almond milk, melted coconut oil, and vanilla extract until well combined.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined.
  5. Fold in the diced peaches gently to avoid mashing them.
