Ingredients

  • Almond flour - 1 cup
  • Shredded mozzarella cheese - 1 cup
  • Cream cheese - 2 oz
  • Egg - 1 large
  • Baking powder - 1 tsp
  • Salt - 1/2 tsp
  • Black pepper - 1/4 tsp
  • Sliced pastrami - 150 g
  • Sliced dill pickles - 100 g
  • Dijon mustard - 2 tbsp
  • Shredded cheddar cheese - 1/2 cup

Steps

  1. Preheat your oven to 200°C (400°F).
  2. In a mixing bowl, combine almond flour, shredded mozzarella cheese, cream cheese, egg, baking powder, salt, and black pepper. Mix until a dough forms.
  3. Place the dough between two sheets of parchment paper and roll it out into a 10-inch circle.
  4. Transfer the rolled-out dough onto a baking sheet lined with parchment paper.
  5. Bake the crust in the preheated oven for 10-12 minutes, or until it is golden and firm.
  6. Remove the crust from the oven and spread Dijon mustard evenly over the top.
  7. Layer the sliced pastrami over the mustard, followed by the dill pickles.
  8. Sprinkle shredded cheddar cheese on top of the pastrami and pickles.
  9. Return the pizza to the oven and bake for an additional 5-7 minutes, or until the cheese is melted and bubbly.
  10. Allow to cool for a few minutes before slicing and serving.
