Ingredients
- Pasta (spaghetti or penne) - 150 grams
- Zucchini - 1 medium (about 200 grams), sliced
- Olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Cherry tomatoes - 100 grams, halved
- Fresh basil - 10 grams, chopped
- Salt - to taste
- Black pepper - to taste
- Parmesan cheese (optional) - 30 grams, grated
Steps
- Bring a large pot of salted water to a boil and cook the pasta according to package instructions until al dente. Drain and set aside, reserving 1/4 cup of pasta water.
- In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for 1 minute until fragrant, being careful not to burn it.
- Add the sliced zucchini to the skillet and cook for about 5-7 minutes, stirring occasionally, until the zucchini is tender and lightly browned.
- Stir in the halved cherry tomatoes and cook for an additional 2-3 minutes until they are just softened.
- Add the cooked pasta to the skillet, tossing everything together. If the mixture appears dry, add a little reserved pasta water to achieve the desired consistency.
- Season with salt, black pepper, and fresh basil. Toss well to combine.
- Serve immediately, topped with grated Parmesan cheese if desired.
