Ingredients

  • Pasta (spaghetti or linguine) - 200 grams
  • Olive oil - 2 tablespoons
  • Garlic, minced - 3 cloves
  • Shallot, finely chopped - 1 medium
  • White wine (dry) - 120 ml
  • Vegetable broth - 120 ml
  • Fresh parsley, chopped - 2 tablespoons
  • Salt - to taste
  • Black pepper - to taste
  • Parmesan cheese, grated (optional) - 30 grams

Steps

  1. Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain and set aside, reserving a cup of pasta water.
  2. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and chopped shallot, sautéing until fragrant and translucent, about 2-3 minutes.
  3. Pour in the white wine and let it simmer for about 3-4 minutes until slightly reduced.
  4. Add the vegetable broth and bring to a gentle simmer. If the sauce is too thick, add a bit of reserved pasta water to achieve your desired consistency.
  5. Toss in the cooked pasta and chopped parsley, mixing well to coat the pasta with the sauce. Season with salt and black pepper to taste.
  6. Serve immediately, topped with grated Parmesan cheese if desired.
