Ingredients
- Pasta (spaghetti or linguine) - 200 grams
- Olive oil - 2 tablespoons
- Garlic, minced - 3 cloves
- Shallot, finely chopped - 1 medium
- White wine (dry) - 120 ml
- Vegetable broth - 120 ml
- Fresh parsley, chopped - 2 tablespoons
- Salt - to taste
- Black pepper - to taste
- Parmesan cheese, grated (optional) - 30 grams
Steps
- Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain and set aside, reserving a cup of pasta water.
- In a large skillet, heat the olive oil over medium heat. Add the minced garlic and chopped shallot, sautéing until fragrant and translucent, about 2-3 minutes.
- Pour in the white wine and let it simmer for about 3-4 minutes until slightly reduced.
- Add the vegetable broth and bring to a gentle simmer. If the sauce is too thick, add a bit of reserved pasta water to achieve your desired consistency.
- Toss in the cooked pasta and chopped parsley, mixing well to coat the pasta with the sauce. Season with salt and black pepper to taste.
- Serve immediately, topped with grated Parmesan cheese if desired.
