Ingredients

  • Pasta (e.g., fettuccine) - 150 grams
  • Ground venison - 200 grams
  • Olive oil - 2 tablespoons
  • Onion, finely chopped - 1 medium (about 100 grams)
  • Garlic, minced - 2 cloves
  • Carrot, diced - 1 medium (about 70 grams)
  • Celery, diced - 1 stalk (about 50 grams)
  • Canned diced tomatoes - 400 grams
  • Tomato paste - 2 tablespoons
  • Dried oregano - 1 teaspoon
  • Dried basil - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley, chopped - 2 tablespoons
  • Grated Parmesan cheese (optional) - 30 grams

Steps

  1. Cook the pasta according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the chopped onion, garlic, carrot, and celery. Sauté for about 5-7 minutes until the vegetables are softened.
  3. Add the ground venison to the skillet, breaking it apart with a spatula. Cook for 5-7 minutes until browned and cooked through.
  4. Stir in the canned diced tomatoes, tomato paste, dried oregano, dried basil, salt, and black pepper. Bring the mixture to a simmer and cook for about 10 minutes, allowing the flavors to meld together.
  5. Once the sauce has thickened slightly, add the cooked pasta to the skillet, tossing to coat the pasta with the sauce. Cook for an additional 2-3 minutes to heat through.
  6. Remove from heat, garnish with fresh parsley, and serve with grated Parmesan cheese if desired.
