  • Pasta (spaghetti or fusilli) - 200 grams
  • Canned tuna in olive oil - 1 can (about 150 grams, drained)
  • Fresh spinach - 150 grams
  • Garlic - 2 cloves, minced
  • Olive oil - 2 tablespoons
  • Lemon juice - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste
  • Parmesan cheese (optional) - 30 grams, grated

Steps

  1. Bring a large pot of salted water to a boil and cook the pasta according to package instructions until al dente, usually around 8-10 minutes.
  2. While the pasta is cooking, heat olive oil in a large skillet over medium heat.
  3. Add the minced garlic to the skillet and sauté for about 1 minute until fragrant, being careful not to burn it.
  4. Add the fresh spinach to the skillet and cook for about 2-3 minutes until wilted.
  5. Drain the canned tuna and add it to the skillet, breaking it up gently with a spatula.
  6. Once the pasta is cooked, reserve 1/2 cup of pasta water, then drain the pasta and add it to the skillet with the spinach and tuna.
  7. Stir everything together, adding the reserved pasta water a little at a time to create a light sauce.
  8. Add lemon juice, salt, and black pepper to taste, mixing well to combine.
  9. Serve hot, topped with grated Parmesan cheese if desired.
