Ingredients
- Pasta (fusilli or penne) - 200 grams
- Canned tuna in olive oil - 1 can (approximately 150 grams, drained)
- Frozen peas - 100 grams
- Olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Onion - 1 small, diced
- Lemon juice - 1 tablespoon
- Fresh parsley - 2 tablespoons, chopped
- Salt - to taste
- Black pepper - to taste
- Red pepper flakes (optional) - 1/4 teaspoon
Steps
- Bring a large pot of salted water to a boil, then add the pasta and cook according to package instructions until al dente, usually about 8-10 minutes.
- In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté for about 3-4 minutes until softened.
- Add the minced garlic to the skillet and cook for an additional 1-2 minutes until fragrant, being careful not to burn it.
- Stir in the frozen peas and cook for about 2-3 minutes until they are heated through.
- Add the drained tuna to the skillet, breaking it up gently with a fork. Stir to combine with the onions and peas.
- Once the pasta is cooked, reserve 1/2 cup of the pasta cooking water, then drain the pasta and add it directly to the skillet with the tuna and peas.
- Pour in the lemon juice, and if the mixture seems dry, add a bit of the reserved pasta water to reach the desired consistency.
- Season with salt, black pepper, and red pepper flakes (if using). Toss everything together until well combined.
- Remove from heat and stir in the chopped parsley before serving.
