Ingredients

  • Pasta (spaghetti or linguine) - 160 grams
  • Canned tuna in olive oil - 1 can (about 150 grams)
  • Garlic - 4 cloves, minced
  • Extra virgin olive oil - 2 tablespoons
  • Red pepper flakes - 1/2 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon - 1, juiced
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Bring a large pot of salted water to a boil and cook the pasta according to package instructions until al dente.
  2. While the pasta is cooking, heat the olive oil in a large skillet over medium heat.
  3. Add the minced garlic and red pepper flakes to the skillet, sautéing for about 1-2 minutes until fragrant, being careful not to burn the garlic.
  4. Drain the canned tuna, reserving a tablespoon of the oil, and add the tuna to the skillet, breaking it into chunks gently.
  5. Once the pasta is cooked, reserve 1/2 cup of pasta water, then drain the pasta and add it directly to the skillet with the tuna and garlic.
  6. Toss everything together, adding a bit of reserved pasta water to create a light sauce.
  7. Stir in the lemon juice, chopped parsley, and season with salt and black pepper to taste.
  8. Serve immediately, garnished with additional parsley if desired.
