  • Canned tuna in olive oil - 150 grams, drained
  • Red bell pepper - 1 medium, diced
  • Yellow bell pepper - 1 medium, diced
  • Garlic - 2 cloves, minced
  • Olive oil - 2 tablespoons
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon juice - 1 tablespoon

Steps

  1. Bring a large pot of salted water to a boil, then add the pasta and cook according to package instructions until al dente, about 8-10 minutes.
  2. While the pasta cooks, heat olive oil in a large skillet over medium heat. Add minced garlic and sauté for about 1 minute until fragrant.
  3. Add the diced red and yellow bell peppers to the skillet and cook for about 5-7 minutes until they are soft and slightly caramelized.
  4. Stir in the drained tuna, salt, and black pepper. Cook for an additional 2-3 minutes until heated through.
  5. Once the pasta is cooked, reserve 1/2 cup of pasta water, then drain the pasta and add it to the skillet with the tuna and bell peppers.
  6. Toss everything together, adding reserved pasta water as needed to create a light sauce. Stir in fresh parsley and lemon juice before serving.
