Ingredients

  • Fresh tomatoes (diced) - 300 grams
  • Fresh basil leaves - 1 cup (packed)
  • Garlic (minced) - 2 cloves
  • Olive oil - 3 tablespoons
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Parmesan cheese (grated, optional) - 50 grams

Steps

  1. Bring a large pot of salted water to a boil and cook the pasta according to package instructions until al dente.
  2. While the pasta cooks, heat the olive oil in a large skillet over medium heat.
  3. Add the minced garlic to the skillet and sauté for about 1 minute until fragrant, being careful not to burn it.
  4. Add the diced tomatoes to the skillet and cook for 5-7 minutes until they begin to soften and release their juices.
  5. Season the tomato mixture with salt and black pepper, then add the fresh basil leaves, stirring to combine.
  6. Once the pasta is cooked, reserve 1/2 cup of pasta water and drain the rest.
  7. Add the cooked pasta to the skillet with the tomato basil mixture, tossing to combine. If the pasta seems dry, add a little reserved pasta water to achieve desired consistency.
  8. Serve the pasta warm, topped with grated Parmesan cheese if desired.
