Ingredients

  • Pasta (spaghetti or linguine) - 150 grams
  • Tahini - 3 tablespoons
  • Garlic (minced) - 1 clove
  • Lemon juice - 2 tablespoons
  • Olive oil - 1 tablespoon
  • Water - 100 milliliters
  • Salt - 1/2 teaspoon
  • Black pepper - to taste
  • Chopped parsley - 2 tablespoons
  • Red pepper flakes - 1/4 teaspoon (optional)

Steps

  1. Bring a large pot of salted water to a boil and cook the pasta according to package instructions until al dente.
  2. While the pasta is cooking, in a mixing bowl, combine tahini, minced garlic, lemon juice, olive oil, water, salt, and black pepper. Whisk until smooth and creamy.
  3. Once the pasta is cooked, reserve 1/4 cup of pasta water, then drain the pasta.
  4. In the same pot, return the drained pasta and add the tahini sauce. Stir well to coat the pasta, adding reserved pasta water as needed to reach desired consistency.
  5. Serve the pasta hot, garnished with chopped parsley and red pepper flakes if desired.
