- Lemon juice - 2 tablespoons
- Olive oil - 1 tablespoon
- Water - 100 milliliters
- Salt - 1/2 teaspoon
- Black pepper - to taste
- Chopped parsley - 2 tablespoons
- Red pepper flakes - 1/4 teaspoon (optional)
Steps
- Bring a large pot of salted water to a boil and cook the pasta according to package instructions until al dente.
- While the pasta is cooking, in a mixing bowl, combine tahini, minced garlic, lemon juice, olive oil, water, salt, and black pepper. Whisk until smooth and creamy.
- Once the pasta is cooked, reserve 1/4 cup of pasta water, then drain the pasta.
- In the same pot, return the drained pasta and add the tahini sauce. Stir well to coat the pasta, adding reserved pasta water as needed to reach desired consistency.
- Serve the pasta hot, garnished with chopped parsley and red pepper flakes if desired.
