Ingredients

  • Pasta (fusilli or penne) - 150 grams
  • Sweet potatoes - 200 grams, peeled and diced
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Fresh spinach - 100 grams
  • Parmesan cheese - 30 grams, grated
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - 2 tablespoons, chopped

Steps

  1. Preheat the oven to 200°C (400°F).
  2. On a baking sheet, toss the diced sweet potatoes with 1 tablespoon of olive oil, salt, and black pepper. Spread them out in a single layer and roast for 20 minutes, or until tender and slightly caramelized.
  3. While the sweet potatoes are roasting, bring a pot of salted water to a boil and cook the pasta according to package instructions until al dente. Drain and set aside.
  4. In a large skillet, heat the remaining tablespoon of olive oil over medium heat. Add the minced garlic and sauté for about 1 minute, or until fragrant.
  5. Add the fresh spinach to the skillet and cook until wilted, about 2-3 minutes.
  6. Reduce the heat to low, then add the roasted sweet potatoes and cooked pasta to the skillet. Toss everything together gently until well combined.
