- Pasta (fusilli or penne) - 150 grams
- Sweet potatoes - 200 grams, peeled and diced
- Olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Fresh spinach - 100 grams
- Parmesan cheese - 30 grams, grated
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - 2 tablespoons, chopped
Steps
- Preheat the oven to 200°C (400°F).
- On a baking sheet, toss the diced sweet potatoes with 1 tablespoon of olive oil, salt, and black pepper. Spread them out in a single layer and roast for 20 minutes, or until tender and slightly caramelized.
- While the sweet potatoes are roasting, bring a pot of salted water to a boil and cook the pasta according to package instructions until al dente. Drain and set aside.
- In a large skillet, heat the remaining tablespoon of olive oil over medium heat. Add the minced garlic and sauté for about 1 minute, or until fragrant.
- Add the fresh spinach to the skillet and cook until wilted, about 2-3 minutes.
