Ingredients
- Pasta (spaghetti or penne) - 150 grams
- Fresh or frozen sweet peas - 100 grams
- Olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Shallot - 1 small, finely chopped
- Vegetable broth - 1/2 cup (120 ml)
- Parmesan cheese (optional, for serving) - 2 tablespoons, grated
- Lemon zest - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Fresh basil leaves - for garnish
Steps
- Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente, about 8-10 minutes.
- While the pasta is cooking, heat olive oil in a large skillet over medium heat. Add the minced garlic and chopped shallot, sautéing until fragrant and translucent, about 2-3 minutes.
- Add the sweet peas to the skillet and pour in the vegetable broth. Cook for an additional 3-4 minutes until the peas are tender.
- Once the pasta is cooked, reserve 1/4 cup of pasta water, then drain the pasta and add it to the skillet with the peas.
- Toss to combine, adding reserved pasta water as needed to create a light sauce. Stir in lemon zest, and season with salt and black pepper to taste.
- Serve immediately, garnished with grated Parmesan cheese (if using) and fresh basil leaves.
