  • Pasta (whole wheat) - 200 grams
  • Sun-dried tomatoes (packed in oil) - 100 grams, chopped
  • Cooked chicken breast - 150 grams, diced
  • Garlic - 3 cloves, minced
  • Olive oil - 2 tablespoons
  • Parmesan cheese - 30 grams, grated
  • Fresh basil - 10 grams, chopped
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Bring a large pot of salted water to a boil. Add the whole wheat pasta and cook according to package instructions until al dente, usually about 10-12 minutes.
  2. While the pasta cooks, heat the olive oil in a skillet over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
  3. Add the chopped sun-dried tomatoes and cooked chicken breast to the skillet. Stir to combine and heat through for about 3-5 minutes.
  4. Once the pasta is cooked, reserve 1/2 cup of pasta water, then drain the pasta and add it to the skillet with the sun-dried tomatoes and chicken.
  5. Toss everything together, adding reserved pasta water a little at a time if needed for moisture. Season with salt and black pepper to taste.
  6. Remove from heat and stir in the grated Parmesan cheese and chopped basil. Serve warm, garnished with additional basil if desired.
