- Pasta (whole wheat) - 200 grams
- Sun-dried tomatoes (packed in oil) - 100 grams, chopped
- Cooked chicken breast - 150 grams, diced
- Garlic - 3 cloves, minced
- Olive oil - 2 tablespoons
- Parmesan cheese - 30 grams, grated
- Fresh basil - 10 grams, chopped
- Salt - to taste
- Black pepper - to taste
Steps
- Bring a large pot of salted water to a boil. Add the whole wheat pasta and cook according to package instructions until al dente, usually about 10-12 minutes.
- While the pasta cooks, heat the olive oil in a skillet over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
- Add the chopped sun-dried tomatoes and cooked chicken breast to the skillet. Stir to combine and heat through for about 3-5 minutes.
- Once the pasta is cooked, reserve 1/2 cup of pasta water, then drain the pasta and add it to the skillet with the sun-dried tomatoes and chicken.
- Toss everything together, adding reserved pasta water a little at a time if needed for moisture. Season with salt and black pepper to taste.
- Remove from heat and stir in the grated Parmesan cheese and chopped basil. Serve warm, garnished with additional basil if desired.
