- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Red pepper flakes (optional) - 1/4 teaspoon
- Parmesan cheese (grated) - 30 grams
- Lemon juice - 1 tablespoon
Steps
- Bring a large pot of salted water to a boil and cook the pasta according to package instructions until al dente.
- While the pasta cooks, heat the olive oil in a large skillet over medium heat.
- Add the minced garlic to the skillet and sauté for about 1 minute until fragrant, being careful not to burn it.
- Add the fresh spinach to the skillet and cook for 2-3 minutes until wilted.
- Once the pasta is cooked, reserve 1/2 cup of pasta water, then drain the pasta.
- Add the drained pasta to the skillet with the spinach and garlic, tossing to combine.
- If the pasta seems dry, add reserved pasta water a little at a time until desired consistency is reached.
- Season with salt, black pepper, and red pepper flakes if using, and toss again.
- Remove from heat and stir in the lemon juice and grated Parmesan cheese.
- Serve immediately, garnished with extra Parmesan if desired.
