Ingredients

  • Pasta (spaghetti or penne) - 200 grams
  • Fresh spinach - 150 grams
  • Garlic - 4 cloves, minced
  • Olive oil - 3 tablespoons
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Red pepper flakes (optional) - 1/4 teaspoon
  • Parmesan cheese (grated) - 30 grams
  • Lemon juice - 1 tablespoon

Steps

  1. Bring a large pot of salted water to a boil and cook the pasta according to package instructions until al dente.
  2. While the pasta cooks, heat the olive oil in a large skillet over medium heat.
  3. Add the minced garlic to the skillet and sauté for about 1 minute until fragrant, being careful not to burn it.
  4. Add the fresh spinach to the skillet and cook for 2-3 minutes until wilted.
  5. Once the pasta is cooked, reserve 1/2 cup of pasta water, then drain the pasta.
  6. Add the drained pasta to the skillet with the spinach and garlic, tossing to combine.
  7. If the pasta seems dry, add reserved pasta water a little at a time until desired consistency is reached.
  8. Season with salt, black pepper, and red pepper flakes if using, and toss again.
  9. Remove from heat and stir in the lemon juice and grated Parmesan cheese.
  10. Serve immediately, garnished with extra Parmesan if desired.
