Ingredients

  • Pasta (whole wheat or regular) - 200 grams
  • Fresh spinach - 150 grams
  • Feta cheese - 100 grams, crumbled
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Cherry tomatoes - 100 grams, halved
  • Red pepper flakes - 1/4 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Lemon juice - 1 tablespoon
  • Parmesan cheese (optional) - 20 grams, grated

Steps

  1. Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente.
  2. While the pasta is cooking, heat the olive oil in a large skillet over medium heat. Add the minced garlic and red pepper flakes, and sauté for about 1 minute until fragrant.
  3. Add the cherry tomatoes to the skillet and cook for an additional 3-4 minutes until they begin to soften.
  4. Stir in the fresh spinach and cook until wilted, about 2-3 minutes.
  5. Once the pasta is cooked, reserve 1/2 cup of pasta water, then drain the rest. Add the drained pasta to the skillet with the spinach and tomatoes.
  6. Toss everything together, adding reserved pasta water a little at a time until you reach your desired sauce consistency.
  7. Remove from heat and stir in the crumbled feta cheese, lemon juice, salt, and pepper to taste.
  8. Serve warm, topped with grated Parmesan cheese if desired.
