Ingredients

  • Pasta (penne or rotini) - 150 grams
  • Fresh spinach - 100 grams
  • Olive oil - 1 tablespoon
  • Garlic - 2 cloves, minced
  • All-purpose flour - 1 tablespoon
  • Milk (dairy or non-dairy) - 250 ml
  • Cream cheese - 100 grams
  • Grated Parmesan cheese - 50 grams
  • Salt - to taste
  • Black pepper - to taste
  • Nutmeg - a pinch

Steps

  1. Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant, being careful not to burn it.
  3. Add the fresh spinach to the skillet and cook for about 3-4 minutes until wilted. Remove from the skillet and set aside.
  4. In the same skillet, add the flour and cook for 1 minute, stirring constantly to create a roux.
  5. Gradually whisk in the milk, stirring constantly until the mixture thickens, about 3-5 minutes.
  6. Add the cream cheese and grated Parmesan cheese to the sauce, stirring until smooth and creamy. Season with salt, black pepper, and a pinch of nutmeg.
  7. Add the cooked pasta and wilted spinach to the cheese sauce, tossing gently to combine and heat through.
  8. Serve immediately, garnished with additional Parmesan cheese if desired.
