- Parmesan cheese, grated - 50 grams
- Garlic, minced - 2 cloves
- Lasagna noodles - 4 sheets
- Olive oil - 2 tablespoons
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Nutmeg, ground - a pinch
- Water - 2 liters
Steps
- Bring 2 liters of water to a boil in a large pot. Add a teaspoon of salt and the lasagna noodles. Cook according to package instructions until al dente, then drain and set aside.
- In a skillet, heat 2 tablespoons of olive oil over medium heat. Add minced garlic and sauté for 1-2 minutes until fragrant.
- Add the fresh spinach to the skillet and cook until wilted, about 3-4 minutes. Remove from heat and let cool slightly.
- In a mixing bowl, combine the wilted spinach, ricotta cheese, grated Parmesan cheese, salt, black pepper, and a pinch of nutmeg. Mix until well combined.
- Lay out the cooked lasagna sheets on a clean surface. Spoon the spinach and cheese mixture evenly onto one end of each sheet, then roll them up tightly to form filled pasta rolls.
- Preheat the oven to 180°C (350°F). Place the filled pasta rolls in a baking dish, seam side down.
- Drizzle a little olive oil over the top and sprinkle with extra Parmesan cheese if desired.
- Cover the baking dish with aluminum foil and bake for 20 minutes. Remove the foil and bake for an additional 10 minutes until golden and bubbly.
- Remove from the oven and let cool for a few minutes before serving. Enjoy your pasta with spinach and cheese filling!
