Ingredients

  • Fresh spinach - 150 grams
  • Ricotta cheese - 100 grams
  • Parmesan cheese, grated - 50 grams
  • Garlic, minced - 2 cloves
  • Lasagna noodles - 4 sheets
  • Olive oil - 2 tablespoons
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Nutmeg, ground - a pinch
  • Water - 2 liters

Steps

  1. Bring 2 liters of water to a boil in a large pot. Add a teaspoon of salt and the lasagna noodles. Cook according to package instructions until al dente, then drain and set aside.
  2. In a skillet, heat 2 tablespoons of olive oil over medium heat. Add minced garlic and sauté for 1-2 minutes until fragrant.
  3. Add the fresh spinach to the skillet and cook until wilted, about 3-4 minutes. Remove from heat and let cool slightly.
  4. In a mixing bowl, combine the wilted spinach, ricotta cheese, grated Parmesan cheese, salt, black pepper, and a pinch of nutmeg. Mix until well combined.
  5. Lay out the cooked lasagna sheets on a clean surface. Spoon the spinach and cheese mixture evenly onto one end of each sheet, then roll them up tightly to form filled pasta rolls.
  6. Preheat the oven to 180°C (350°F). Place the filled pasta rolls in a baking dish, seam side down.
  7. Drizzle a little olive oil over the top and sprinkle with extra Parmesan cheese if desired.
  8. Cover the baking dish with aluminum foil and bake for 20 minutes. Remove the foil and bake for an additional 10 minutes until golden and bubbly.
  9. Remove from the oven and let cool for a few minutes before serving. Enjoy your pasta with spinach and cheese filling!
