  • Fresh pasta sheets - 200 grams
  • Fresh spinach - 150 grams
  • Ricotta cheese - 100 grams
  • Shredded mozzarella cheese - 50 grams
  • Parmesan cheese, grated - 30 grams
  • Garlic, minced - 2 cloves
  • Olive oil - 1 tablespoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Nutmeg - a pinch
  • Water - for boiling

Steps

  1. Bring a large pot of salted water to a boil.
  2. In a skillet, heat olive oil over medium heat and sauté the minced garlic until fragrant, about 1 minute.
  3. Add the fresh spinach to the skillet and cook until wilted, about 2-3 minutes. Remove from heat and let cool slightly.
  4. In a mixing bowl, combine the wilted spinach, ricotta cheese, shredded mozzarella, grated Parmesan, salt, black pepper, and nutmeg. Mix until well combined.
  5. Lay out the fresh pasta sheets on a clean surface and cut them into squares, approximately 10x10 cm.
  6. Place about 1 tablespoon of the spinach and cheese mixture in the center of each pasta square.
  7. Moisten the edges of the pasta with water, fold over to create a triangle or pocket, and press firmly to seal.
  8. Once all the ravioli are filled and sealed, carefully drop them into the boiling water in batches. Cook for about 3-4 minutes or until they float to the surface.
  9. Using a slotted spoon, remove the cooked pasta and drain it gently.
  10. Serve warm, drizzled with olive oil and a sprinkle of additional grated Parmesan cheese if desired.
